*Vegan, free of the 8 main food allergens*
½ cup pumpkin puree
½ - 1 cup milk or milk alternative
1 ½ TB maple syrup
½ tsp vanilla extract
1/8 tsp ground nutmeg
½ - 1 tsp cinnamon
2 - 4 TB chia seeds
dash of salt
Optional: secondary sweetener such as Stevia or turbinado cane sugar.
Whisk all ingredients together until smooth, or puree in a blender.
Divide mixture evenly between two cups. Allow 1-2 hours to set. Before eating, garnish with Granola Bark crumbles, fruit, and seeds of your choosing. Enjoy with a spoon, or using large pieces of Granola Bark!
